BEETROOT SPREAD AND LETTUCE SNACKS

 
amount  4 servings

Ingredients

100g beetroots
250g ARKET hummus
50g tahini
25ml olive oil, plus 2 tbsp oil for roasting
4 little gem lettuces
4 sprigs of chervil
2 tbsp roasted onions
Dried flowers
Salt
Black pepper

Method

01  Peel and cut the beetroots into bite-size pieces.

02  Toss the beetroots with olive oil, salt and pepper in an oven tray lined with baking paper.

03  Roast the beets in the oven for 45 minutes in 180°C, until soft.

04  Blend in a food processor with the delicious ARKET hummus, tahini, and olive oil. Season to taste with salt and black pepper.

05  Cut the gem lettuces in half, lengthways, and rinse in cold water. Let dry on paper.

06  Spread the beetroot spread onto the lettuce. Drizzle with olive oil and sprinkle with chervil, roasted onions, and dried flowers.
