Our food philosophy is grounded in the New Nordic kitchen, a food movement, originating the early 2000s. While deeply rooted in Nordic traditions, the New Nordic kitchen seeks to reinterpret classic methods and ingredients in innovative ways. It embraces modern influences and elements from culinary traditions worldwide, contributing to the dynamism of the contemporary food scene through the interchange between new and old, local and global.

Eating in season

Eating in season means a kitchen focused on produce harvested at its natural peak for flavour and nutrition. Seasonal vegetables, fruits and berries burst with taste and colour, enriching our everyday food experiences and adding variety to our diets. Following the natural rhythm of the seasons is not only an opportunity to enjoy better taste but also to rediscover delicious but perhaps underused ingredients and nourish our bodies.

Our menu

Following the variations of the seasons, our menu features vegetarian options complemented by signature pastries, limited-edition pastry drops and bespoke beverages. The recipes are plant-forward and rely on a few pure and natural flavours, influenced by the ideas and scientific conclusions of the Planetary Health Diet, launched by the EAT-Lancet commission.

Speciality coffee

Passionate about the taste of good coffee, we only serve certified speciality coffee blends at our cafés. ‘Speciality coffee’ refers to beans that are carefully sourced and roasted, and expertly brewed. Celebrated for their distinctive taste, the beans are gently roasted to preserve the natural flavour and unique character of each coffee. Only the highest-quality, defect-free beans are used, revealing complex layers that elevate the everyday coffee experience.

Our suppliers

We aim to work with smaller-scale suppliers that prioritise farming and production that nurture the quality of our ingredients. They often practice agriculture that honours natural ecosystems and are dedicated to bringing full flavour and nutrition to each ingredient. By partnering with these small-scale producers, we want to highlight traditional practices, support local production, and a more traceable food supply chain.
